White Chocolate Chunk Brownies!

valentines brownies picturesWho says Valentine’s Day is only for lovers? That ain’t true actually. We live in a world where love doesn’t choose anyone. So why be lonely?

If you’re just one of those who are tired of the usual and would want to be extraordinary thinkers when it comes to coming up with something new (and sweet)this Valentine’s Day, then you came to the right spot.

The possibilities are endless! But we finally came up with for the most anticipated 14th day of February was to have a beautifully packed assortment of brownies that would actually make great gifts for friends, for special people, and most of all - for yourself.

Not only do they look great but you also get a double dose of chocolate as each brownie is stuffed with chocolate pieces giving it the extraordinary chewy middles. The colorful frostings turn these brownies into something deliciously special. They come in seven different looks. Though we only have the chocolate and white chocolate chunk brownies, we made them special by picking different ingredients to add in. By using any combination of chocolate and white chocolate chips, chopped nuts, candy-coated chocolate pieces, etc. we finally came up with these:

? white chocolate frosting topped with grated chocolate

? pink frosting garnished with white chocolate chips

So after spending much time and money with those bouquets and cards, try adding up this great box of Valentine’s brownies. For just 180php for a box of eight brownies, you’ll surely melt the hearts of those to whom they will be given..

shades of purple

It’s a bit late now to be receiving Christmas presents. And I got one a few days ago and I find it really cute! We’ve named it “Purpee” - plainly because of its strong purple color. Speaking of purple, I’ve got just the right recipe for those who love purple..

Ube Chiffon Cake

2 1/2 cups cake flour, sifted

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon vanilla

3/4 cup evaporated milk

1 cup ube, cooked and finely grated

1/2 cup corn syrup

7 egg yolks, slightly beaten

1/2 cup salad oil

1 cup egg whites

1 teaspoon cream of tartar

1 cup granulated sugar

6 drops red food color

6 drops blue food color

The procedure goes like this:

1. Sift flour, baking powder, and salt. Set aside.

2. Mix in vanilla to milk. Set aside.

3. Put in the ube in mixing bowl, gradually stir in milk mixture.

4. Add syrup and egg yolks, stirring constantly.

5. Add oil. Stir in flour mixture gradually.

6. Beat egg whites with cream of tartar until soft peaks form. Add in sugar gradually.

7. Add red and blue food colors and continue beating until stiff but not dry.

8. Fold batter into egg whites.

Baking Temperature: 325 degrees Fahrenheit

Baking Time: 55 minutes (then increase to 350 degrees Fahrenheit for 10 minutes more.)

’small’ things matter

candle lighted birthday cakeI was a bit doing cramming yesterday as I was having trouble coming up with a surprise for a friend. Im so preoccupied with my busy schedule that I couldnt imagine having time to somehow make something really special. Then I got to come across the idea of giving away a cake - but to make it more extraordinary… I’ll be the one making it. And that’s how the plan actually root from.

Bake a small cake, candlelight dinner, some balloons, some flowers.. and that special moment…

Now before I go on saying the details, here’s the frosting recipe I would like to share to you..

Chocolate Buttered Frosting

1 cup sugar

1/3 cup water

2 egg yolks

1 whole egg

3/4 cup butter

1/4 cup cocoa

1 teaspoon vanilla

Procedure:

1. Dissolve water and sugar; cook into syrup.

2. Beat the egg yolks and whole egg until lemon-colored.

3. Pour in syrup into egg mixture. Beat until thick.

4. Beat butter slightly and blend in the egg mixture.

5. Add cocoa and vanilla.

Now all you need is a small cake and place this frosting on and chill. Now you have your wonderful present! Ready for the s-u-r-p-r-i-s-e!

What do you usually do when you’re upset? A lot of us may just want to indulge into a sweet slice of your favorite cake. But for chocolate lovers like me, I have here just the right recipe that’s going to leave a smile on your face! Ü

CHOCOLATE FUDGE CAKE

Ingredients:

2/3 cup butter

1 3/4 cups vanilla

2 pieces eggs

1/4 cup chocolate cocoa

2 1/2 cups cake flour

1 1/4 teaspoon baking soda

1/2 teaspoon salt

Procedure:

1. Mix 1 cup cold water with 1/4 cup evaporated milk.

2. Sift flour, baking soda and salt.

3. Cream butter and gradually add sugar.

4. Add eggs one at a time.

5. Add vanilla and cocoa.

6. Add dry ingredients alternately with water-milk mixture.

Baking Temperature: 350 degrees Fahrenheit

Baking Time: 30 - 35 minutes

This recipe makes about two 9 x 1 1/2-inch round pans. Enjoy!

Some pineapples and carrots

They say that the best way to a man’s heart is through his stomach! haha.. that’s true! BUT. if you’re going to like feed him, you might as well give him what’s fit and right. Do I hear a ‘YES’? Well, anyway I just got this recipe that I find really nutritious.

Pineapple Carrot Cake

Ingredients:

3 cups all purpose flour

2 cups sugar

2 teaspoon baking powder

2 teaspoon baking soda

1 cup oil

4 eggs

2 cups carrot, finely grated

1 cup pineapple with syrup, crushed

1 teaspoon vanilla

1 teaspoon salt

Procedure:

1. Preheat oven at 350 degrees Fahrenheit.

2. Grease and line 13 x 9 x 2 rectangular pan. Set aside.

3. Sift together flour, baking powder, and baking soda.

4. Add sugar; mix thoroughly and make a well.

5. Add oil, eggs, carrot, crushed pineapple, and vanilla.

6. Beat for 2 minutes at medium heat using a mixer.

7. Pour into prepared pan and bake for 35 minutes.

8. Bake.

Who said you can’t make ‘em the way you want ‘em?

I call this THE
Minted Chocolate Chip Brownies

Ingredients:

3/4 cup granulated sugar

1/2 cup butter or margarine

2 tablespoons water

1 cup semisweet chocolate chips or mini chocolate chips

1 1/2 teaspoons vanilla

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

2 large eggs

1 cup mint chocolate chips

powdered sugar for garnish

Procedure:

1. Combine sugar, butter, and water in a medium microwavable mixing bowl. Microwave at high 2 1/2 to 3 minutes or until butter is melted. Stir in semisweet chips; stir gently until chips are melted and mixture is well blended. Stir in vanilla; let stand 5 minutes to cool.

2. Place flour, baking soda and salt in small bowl; stir to combine.

3. Beat eggs into chocolate mixture.
(Tip: Beat eggs one at a time.) Add flour mixture; mix well. Stir in mint chips or any minted candies if you have some.

4. Spread batter evenly into a 9-inch square baking pan.

Baking Temperature: 180 C
Baking Time: 25 minutes

5. Remove pan and let cool. Place powdered sugar in fine-mesh strainer; sprinkle over brownies if desired.

And there you have your Minty Chocolate brownies.. Ü

It is a fact that bananas offer 123 I.U. of vitamin A, a full range of vitamin B together with .07 mg of Thiamine, .15 mg of Riboflavin, .82 mg Niacin, .88 mg vitamin B6, and 29 mg of Folic Acid. There are even 13.8 mg of vitamin C. On the mineral scale Calcium counts in at 9.2 mg, Magnesium 44.1 mg, with trace amounts of iron and zinc.

I came across this recipe I find very good when you’re on diet. All these vitamins and minerals are going to make you fit and healthy - that’s for sure.

Why don’t you hit the kitchen and go making some!

Ingredients:

1 cup ripe banana (smashed)

1 cup flour

1/2 cup maragarine or butter

3/4 cup sugar

2 pieces eggs

1 teaspoon baking powder

1/2 teaspoon salt

5 tablespoons cocoa

1/4 cup powdered milk

1/2 teaspoon vanilla

1/2 cup chopped nuts

Here’s how to do it:

Cream together sugar, butter, and eggs. Add banana and vanilla. Sift together dry ingredients and add to banana mixture. Stir in chopped nuts. Bake in greased 8-inch square pan for about 30 minutes. Cool then cut into squares. Ü

Ingredients:

1 cup butterscotch flavored chips

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup butter, softened

1/2 cup packed light brown sugar

2 large eggs

1/2 teaspoon vanilla

1 cup semi sweet chocolate chips

1 tablespoon unsweetened cocoa powder for garnish

This is how its done!

1. Prehet oven to 180 degrees Celcius.

2. Melt butterscotch-flavored chips in small, heavy saucepan over low heat, stirring constantly; ste aside.

3. Combine flour, baking powder, and salt.

4. Beat butter and sugar in a large bowl until light and fluffy.

(Tip: use a mixer at medium speed)

Beat in eggs one at a time, scraping down side of the bowl after each addition. Beat in vanilla. Beat in melted butterscotch chips. Add flour mixture. Beat at low speed until well blended, scaping down side of bowl.

5. Spread batter evenly into a greased 9-inch square baking pan.

Baking time: 20 to 25 minutes

6. Remove pan and immediately sprinkle chocolate chips in single layer over brownie. Let stand about 4 minutes or until chocolate is melted. Spread chocolate evenly over top of brownie with thin spatula.

(Tip: Lightly swirl if desired.)

6. Place pan in rack and let cool completely.

7. to garnish, place small strips of cardboard over chocolate. Place cocoa in fine-mesh strainer; sprinkle over brownie. Carefully remove cardboard. But brownie into 2 1/4-inch squares.

8. Store tightly covered at room temperature or freeze up to 3 months.

There you have it. Go easy on it. It would definitely take more time on making it rather than just eating it all up! Enjoy!
